29 PF 3-502.11 (A): A FOOD ESTABLISHMENT shall obtain a VARIANCE from the REGULATORY AUTHORITY before: (A)Smoking FOOD as a method of FOOD preservation rather than as a method of flavor enhancement; (B)Curing FOOD; (C) Using FOOD ADDITIVES or adding components such as Clostridium botulinum and Listeria monocytogenes Controls vinegar: (1) As a method of FOOD preservation rather than as a method of flavor enhancement, or (2) To render a FOOD so that it is not TIME/TEMPERATURE CONTROL OF SAFETY FOOD; (D) Packaging TIME/TEMPERATURE CONTROL FOR SAFETY FOOD using a REDUCED OXYGEN PACKAGING method except where the growth of and toxin formation by Clostridium botulinum and the growth of Listeria monocytogenes are controlled; (E) Operating a MOLLUSCAN SHELLFISH life-support system display tank used to store or display shellfish that are offered for human consumption; (F) Custom processing animals that are for personal use as FOOD and not for sale or service in a FOOD ESTABLISHMENT; (G) Preparing FOOD by another method that is determined by the REGULATORY AUTHORITY to require a VARIANCE; or (H) Sprouting seeds or beans.
Observed the following foods for sale with a variance from KCHD: 1)Beef jerky, 2)Dried chorizo, 3)Ceviche. A meeting has been scheduled for January 25 at 2:30 pm to prepare the necessary variance and HACCP documents. - (Correct By: Jan 25, 2024)
41 C 3-304.14 (B)(1)(2): (B) Cloths in-use for wiping counters and other EQUIPMENT surfaces shall be: (1) Held between uses in a chemical sanitizer solution at a concentration specified under § 4-501.114; and (2) Laundered daily as specified under ¶ 4-802.11(D).
The concentration of the chlorine sanitizer solution held at the chicken prep area was too low. A new solution was prepared at the proper concentration. COS
47 C 4-101.19: NonFOOD-CONTACT SURFACES of EQUIPMENT that are exposed to splash, spillage, or other FOOD soiling or that require frequent cleaning shall be constructed of a CORROSION-RESISTANT, nonabsorbent, and SMOOTH material.
Observed cardboard used as a shelf surface in the walk-in cooler. Remove and maintain by the next routine inspection.
51 C 5-205.15 (B): A PLUMBING SYSTEM shall be(B) Maintained in good repair.
The sink in the bathroom is draining very slowly. Repair and maintain by the next routine inspection.
53 C 6-202.14: Except where a toilet room is located outside a FOOD ESTABLISHMENT and does not open directly into the FOOD ESTABLISHMENT such as a toilet room that is provided by the management of a shopping mall, a toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door.
The bathroom door is not self-closing. Repair and maintain by the next routine inspection. Repeat
56 C 6-303.11: The light intensity shall be: (A) At least 108 lux (10 foot candles) at a distance of 75 cm (30 inches) above the floor, in walk-in refrigeration units and dry FOOD storage areas and in other areas and rooms during periods of cleaning; (B) At least 215 lux (20 foot candles): (1) At a surface where FOOD is provided for CONSUMER self-service such as buffets and salad bars or where fresh produce or PACKAGED FOODS are sold or offered for consumption, (2) Inside EQUIPMENT such as reach-in and under-counter refrigerators; and (3) At a distance of 75 cm (30 inches) above the floor in areas used for handwashing, WAREWASHING, and EQUIPMENT and UTENSIL storage, and in toilet rooms; and (C)At least 540 lux (50 foot candles) at a surface where a FOOD EMPLOYEE is working with FOOD or working with UTENSILS or EQUIPMENT such as knives, slicers, grinders, or saws where EMPLOYEE safety is a factor.
The lighting at the prep table in the back room is insufficient. Improve the lighting as outlined above and maintain by the next routine inspection.
